Guess who made this decent-looking soursop mousse torte from scratch?
I’m very proud of it, especially because it’s the first cake I’ve done from scratch, all by myself.
Last week, one of the members in the knitting group I recently joined taught me to crochet and I’ve already made a wonky potholder from scrap yarn!
Also, I just baked my first batch of baguettes; They took a lot of effort, but came out really well.

Food Accidents: BLT edition
It’s my day off. I want a BLT!
- So it’s no problem that I don’t have lettuce. I’ll use spinach.
- Aw man, no sliced tomatoes either. Stay cool, Miranda! Make a tasty concoction with your canned no salt tomato chunks. Add olive oil, sea salt, pepper, cayenne, oregano, chopped red onion and garlic, and about a teaspoon of honey mustard (b/c you like that on your BLTs anyway) and cook it for like 15 minutes on low to medium heat so it can cook down and be mad tasty on some crunchy toasted bread.
- Make bacon. EASY!
- Wait, no bread?! Like seriously kitchen, what do you have? Brown rice or pasta? Hmmm. Pasta it is. Chop that bacon up, shred some provolone and throw it in there!
So BLT, I mean, BST pasta salad. I think. Really I’m trying so hard not to go to the grocery store every five seconds; trying to use what I have. As upset as I am about not having a BLT, this was really good! I need more tasty kitchen accidents!
(best bet is to just throw your cooked pasta and tomatoes on fresh spinach so that it wilts slowly instead of being cooked, stringy spinach. But to each their own!)

I think I will just buy regular ol’ cheese pizza from now on. I just added spinach & bacon. I think this is a tastier and cheaper route.

Spaghetti Tacos? «
At first I thought this article was a pretty silly thing to put in the New York Times. iCarly show starts a food craze amongst tweens! Moms hectically searching for recipes to please their children! But I guess it’s important to note such a cultural phenomenon among young people that doesn’t involve fashion, or having the latest gadget. This time it involves cuisine and although it may end up a fad, it seems less superficial. Young folks having fun with their food, trying new things, and being creative is a good thing I think.
Despite the fact that I’m always disappointed with Top Chef, or am bored with the new “cooks” The Food Network gives a show to nearly every month, I’m always impressed with how many people around me view the shows. I think people would like to stay home and cook a sumptuous meal for their family and friends. And even if we don’t always reach that goal, at least folks are trying and often, finding new things to bring to the table. Pun intended. I remember this being one of my goals before the end of the year and I made it a goal because cooking a good meal really shows how much you love someone. The ingredients and the time you put into it really says something to other people. It says, you cared enough not to let this burn to a crisp on the stove while you caught up on your favorite show. Cooking is very meditative. You really can’t be doing other things while you cook.
I also enjoyed this article because I could see how this happened to my generation many years ago. Harriet the Spy (the movie) had come out and I remember her favorite thing was a peanut butter and tomato sandwich. Or maybe it was a tomato and mayo, I can’t remember at this particular time. It was also in the book, but I think seeing it on film made a huge impression on me. So I remember doing the same a few times during my childhood. I remember having friends who did too. Parents thought it was disgusting while we thought it was one step closer to being a Harriet. I’m no fan of iCarly. I’ve tried because my little sister likes it, but I don’t find it all that funny. But I can see how she is probably the coolest thing to most kids. A hero somewhat. And if her eccentric older brother is making kids think about what they eat, I think that is pretty cool. First step in having open-minded kids, I think. Click the link at the top to read this silliness but goodness!

So this would be my 500th post on Tumblr! And to mark the occasion I’m joining in on an awesome blog project that was started by Elsie Flannigan who runs one of my favorite blogs, A Beautiful Mess. It’s a public goal challenge that’s about bettering one’s life. You must pick 4 simple goals and the detailed guidelines can be found here. All in all though they must be result oriented, not the end result and you must blog about them. And it has to be done before the new year.
So here are 4 of mine:
1. Learn a new craft. I’ve been wanting to learn to sew or do screenprinting. There are classes offered in both of these subjects here in San Antonio so I hope to really get it going. And hopefully make some friends while I’m at it!
2. Self-published work. I’ve done a few zines before but it’s been a while since I’ve made a trip to the copy shop. I forgot how fun that was. I haven’t decided if they will be photobooks or little comics. Either way I think this goal will allow me to write more, doodle and take more pictures that I can fill these potential self-published books with.
3. Buy more local and handmade. I made this goal last year and kept it up for a while. Although Target is so great, I’d like to spend more time in vintage shops, on Etsy, and at the farmer’s market. I would one day like to have a local community center/zine library and I would hope that people would come out a support something that is local. So I should start doing it myself.
4. Regular dinners with friends. This seems like a weird goal but I noted that after my dog died how horrible I am with people and I’ve been thinking of activities that would bring me closer to the people I already have around me. I’m in a book club with my buddies and that’s been interesting. But there is something about food that can really bring people together and get them talking about whatever. I look at shows on the Food Network and I love how whenever Ina Garten or Giada make a meal, it’s because people are coming over. I want to cook special dinners for my friends and get together to feel more apart of something. I’ve been feeling very lonely lately and this seems like I’d be giving of myself. Which is the hardest things to give right now.
So those are my 4 goals and I’m excited to read Elsie’s and other folks’ blogs about what they’re doing. I think it will be very inspiring and I’m excited about things to come! Hooray for 500!

Sweet potato french fries (or yams, I couldn’t tell). Seasoned with thyme, garlic, rubbed with a little olive oil (to keep them together) then fried in Canola oil til crispy. Once they were finished I sprinkled a little parmesan on top just to see. It was perfect but you could do without.
Just frozen lima beans. Seasoned with olive oil and sea salt. I like my veggies frozen, they taste fresher.
Grilled turkey legs. Marinated for an hour and half with mustard, honey, ground chili peppers, olive oil, salt and pepper. Thrown on the charcoal grill for a while.
